To me, elderflower syrup smells like childhood. And after summer. Probably everyone has a drink that brings back childhood memories.

I am happy to share the recipe that my whole family has been using for many years.

Ingredients:

  • 5 kg of sugar
  • 2 to 2,5 lemons, ideally organic
  • 30 - 40 fresh elderflower
  • 50 g citric acid

You can find the elderflowers between May and July. My family swears that harvesting elderflowers in direct sunlight makes a difference. For the syrup, we only use the flowers that are exposed to direct sunlight when harvested.

What else do you need:

  • a saucepan or other large, heat-resistant container
  • a fine sieve
  • Bottles for filling

And now the recipe:

  • Optional: wash the flowers. For me it is enough if I check the flowers for insects and collect them away. I only use flowers from the forest or from our garden. These flowers are clean enough for me. If you wash the flowers off, some of the pollen and aroma will be lost.
  • Cut the lemons into thick slices.
  • Pour 1.5 liters of boiling water over all ingredients.
  • Cover and leave all ingredients to stand for three days, stirring frequently.
  • Bring to the boil.
  • Strain hot into bottles and seal immediately.

If that is too complicated for you - or you would like to have an elderberry drink spontaneously - you can put a fresh elderflower in a jug with fresh water. After a few hours you will have a refreshing elderberry water! You can then simply drink the elderberry water as a cold infusion.
